The Culinary Arts Year 1 programme will provide you with the requisite skills and knowledge to work as chefs in intermediate positions producing complex dishes. You will develop cookery skills to prepare, cook and present food employing complex preparation and presentation techniques. You will learn to monitor and maintain health and safety, food safety and security practices, and standard operating policies and procedures to work roles in a commercial kitchen. You will be doing a combination of kitchen workshops and theory studies. There is also a ten week service module where you will be working in Wintec’s fully licensed training restaurant - for more information about Windows visit You will be learning in Wintec’s state of the-art Centre of Hospitality with the best training facilities: two large commercial kitchens, a production kitchen, a training restaurant with indoor and outdoor dining, a licensed bar and a seating capacity for 80 people. Wintec’s learning environment will help keep you focused and motivated all the way to graduation. Each international student enrolled in the Culinary Arts Year 1 programme receives uniforms, a set of knives and small equipment.
Graduates will have the skills and knowledge to work as chefs in intermediate positions producing complex dishes in a professional kitchen.
This programme leads on to the New Zealand Diploma in Cookery (Advanced) (Level 5) with strands in Cookery and Patisserie.
New Zealand Certificate in Cookery (Level 3); or 24 credits at NCEA Level 2, including 12 credits at NCEA Level 2 in English or 毛利 and 10 credits at NCEA Level 1 in Mathematics; or Certificate in Service Industries Sector (Level 3) (including the Cookery course); or Equivalent overseas qualification
Candidates aged 20 years or above who have not met the entry requirements listed above but whose skills, education or work experience indicate that they have a reasonable chance of success may be eligible for special admission at the discretion of the Centre Director or designated nominee.
English Language Requirements:
Candidates who have English as a second language are required to have an International English Language Test System (IELTS) score of 5.5, with no individual band score lower than 5; or equivalent.
TOEFL Paper-based test (pBT) - Score of 530 (with an essay score of 4.5 TWE)
TOEFL Internet-based test (iBT) - Score of 46 (with a writing score of 20)
Cambridge English Examinations - FCE or FCE for schools with a score of 162. No less than 154 in each skill OET at Grade C in all sub-tests
