    Summary

    Do you want to become a chef or a patisserie chef? With the NZ Diploma in Cookery you can choose to undertake a journey in either Cookery or Patisserie starting with basic cooking and food preparation, and continue on to develop the skills to tempt and delight the taste buds of diners in fine dining restaurants locally, nationally, and internationally.

    You will start with the New Zealand Certificate in Cookery Level 4 and progress on to the New Zealand Diploma in Cookery (Advanced) Level 5. At this level you can choose either the Cookery or Patisserie option. And, you will also be working your way to attaining City and Guilds internationally recognised qualifications.

    The pathway for cookery and professional chef training at EIT is a full-time two year journey which offers you stimulating studies and provides the opportunity to begin a career in the hospitality industry.

    Practicum, Work Experience

    During the year all students will work on rostered lunch or dinner productions as part of routine classes.

    During the year students will complete industry placement courses as part of the programme. Approximately 50 hours of industry-based experience per semester will ensure students develop professional networks, apply their professional skills in a commercial situation, and complete an enterprise report.

    The pathway for cookery and professional chef training at EIT is a full-time two year journey which offers you stimulating studies and provides the opportunity to begin a career in the hospitality industry.

    You will also attain the International City and Guilds International Diploma in Food Preparation and Cooking upon successful completion of the programme.

    The diploma at Level 5 is the completion of technical, menu planning and supervision proficiency in professional cookery. The programme progresses learning and experience to senior technical levels. Study is based on culinary research, and the culinary specialties of patisserie and regional food and wine, including development and production of fine dining experiences in training restaurants.

    Formal work experience in industry is an important part of the pathway at Level 5, providing valuable on-the-job training as well as building professional networks and experience.

    Entry criteria

    Applicants entering at Level 5 need to have demonstrated equivalent cookery knowledge or skills as attained via the NZ Certificated in Cookery (Level 4) or National Certificate in Hospitality (Level 4). Demonstrations of knowledge and skills can be either through study at EIT or another institution, or practical work in the hospitality or similar industry that includes a focus on professionalism.

    Basic computer skills are required. The learning activities for all qualifications require students to cook with and consume all types of meat - applicants who are vegetarian should speak directly with international staff before completing the application process. Course duration and final programme structure subject to change.

    English Language Requirements

    • IELTS Academic score of 5.5 with no band score lower than 5.0
    • TOEFL Paper-based test (pBT) score of 530 (with an essay score of 4.5 TWE)
    • TOEFL Internet-based test (iBT) score of 46 (with a writing score of 20)
    • University of Cambridge ESOL Examinations: FCE, or FCE for schools with a score of 162. No less than 154 in each skill.
    • Pearson Test of English (Academic) score of 42
    • City & Guilds IESOL: B2 Communicator with a score of 42
    • NZCEL Level 3 Applied
